Varietal: 100% Aligoté
Aligoté is Burgundy's other white grape, the one Chardonnay's shadow always falls on. It's high-acid, low-pretension, and exactly the kind of grape Maureen and I love. We get ours from Moeller Vineyard in Yamhill-Carlton at 300 feet on sandy loam, practicing organic.
The "Two Eggs" name is literal — we age this in two 700-liter concrete eggs (the egg shape keeps the wine in slow, constant motion as it rests on the lees). Concrete adds texture and a faint mineral lift without the oxygen exposure of barrel, and without the inertness of stainless. The result is Aligoté with the zing intact and a little extra weight on the back palate.
Direct press, no skin contact. Native yeast. Minimal sulfur. No fining, no filtration. Bright, textural, alive.
TASTING NOTES
Pale straw with bright clarity. Green apple, citrus zest, and white flowers on the nose. Crisp acidity with hints of lemon, pear, and subtle mineral texture.
